A pink storm has been quietly shaking up the global chocolate industry over the past two years. Chocolatier Barry Callebaut, who created and patented Ruby Chocolate, branded it the newest and “fourth type of chocolate” after dark, milk and white chocolate. Its shade is actually not the color of cherries or a red rose, but pink, and has been dubbed “millennial chocolate.”
Ruby chocolate
For about 80 years, the world recognized three main types of chocolate: milk chocolate, dark chocolate and white chocolate. These three chocolates were, for most people, an irrevocable, unquestioned fact of life right alongside the seven colors of the rainbow or the five human senses. This all changed in September 2017, when the Swiss cocoa company Barry Callebaut officially announced a fourth type of chocolate : Ruby Chocolate.
Harriston Signature Ruby Chocolate Thins
The ruby chocolate is distinctive because the fresh berry-fruitiness and color precursors are naturally present. These special ruby cocoa beans are sourced from different tropical growing regions of the world using a careful selection method. Neither genus or origin determine the qualification for a cocoa bean to be a ruby bean. It’s the natural occurrence of the cocoa precursors that qualify a cocoa bean to have the ruby bean profile and evoke the ruby color and taste.
Ruby Chocolate
The spectacular taste and pink color come from bringing ingredients together in a secret trademarked process by a famous cacao grower. The bright pink color and flavor are naturally present in the ruby cocoa bean, yet can only be unlocked through a trademarked handling process and do not happen spontaneously in nature.
Ruby Sunshine Cocktail
It’s not for baking, but can be used by bakers for drizzling, sprinkling, and shaving onto cakes and desserts. Ruby Chocolate has a fruity, berry note to the taste with a slight citrus after-note, accompanied with the smooth, decadent feel of chocolate.
Ruby Sunshine Cocktail
Ruby chocolate appeals to the desire of people to be trendy and one-of-a-kind, reinforced by the fact that there were a limited number of chocolate box made available in that first batch (just 5000 in the world, as of January 2020). There have clearly been many more runs of chocolate box since then.
Harriston Signature Chocolates, 13/91, Jalan Cheras, Taman Shamelin Perkasa, Kuala Lumpur, Malaysia Timing – 9am – 5pm;
Pricing – 30 RM (Harriston Signature Ruby Chocolate Thins) per pack.
